(God be with the Christians there – I’m praying for them today after the news of more bombings in Beirut)
Samak bi Khal: Marinated Fish Fillets
2 lbs. white fish fillets (tilapia is wonderful with this)
1 cup olive oil
2/3 cup vinegar
1/4 tsp. cayenne
1 1/2 tsp. salt
1/2 tsp pepper
1 tsp. dry sage
2 Tbsp. parsley (finely chopped)
1 egg (well beaten)
Place fish in a mixing bowl with olive oil and vinegar. Refrigerate in marinade for 2 hours. Set oven at 450 degrees F. Drain and place fish in a buttered baking dish. Sprinkle with seasonings. Add parsley to beaten egg and pour over fish. Bake for 10-15 minutes, checking to make sure after ten minutes that fish is not becoming overcooked. Serve with fresh vegetables and lemon wedges.
P.S. A great side dish to this would be the Lebanese Salad and accompanying dressing that I posted a few months back… and some rice pilaf with a chicken flavored broth would be lovely.
