I actually called Nana tonight and asked for her to walk me step-by-step through this recipe so I could feed my craving. She always makes this for Thanksgiving and Christmas upon request by everyone in the family, and sometimes waiting is just too much. Thankfully, I had the ingredients on hand during our “shop the pantry”, Dave Ramsey, “scorched earth” quest… and I think I have Nana to thank for that. If I remember correctly, she heard me raving about it over the holidays and stuffed a little sack with a box of Jello, a can of cherries, and a small can of pineapple chunks in my luggage for the trip home.
It has been quite some time since I made jello at home. I’m a pretty healthy eater for the most part, so we try not to do a lot of food colorings… well, unless you count my daughter’s red dyed hair (Kool-Aide).
Sorry – I don’t have the lime jello recipe. It is very similar, though. We all fight over which is the best. I lean towards the red. Maybe Nana will give me the lime ingredients next year!
- 1 large box of Cherry Jello
- 1 14.5 oz can Oregon Red Tart Cherries
- 1 8 oz can crushed pineapple
- 1/2 cup water
- 1/2 cup sugar
- 1/3 cup chopped pecans
- Mix cherries, water, Cherry Jello mix, and sugar in medium sauce pan and bring to boil. Remove from heat and stir in pineapple. Place in serving bowl and chill in refrigerator about 20 minutes or until half-way set. Add nuts and stir. Return to refrigerator and finish setting. Serve cold.
- Add whipped cream or cool whip to each serving if you desire.
