I can see the future. ESP, I tell you.
Here’s what I know: You are going to thank me for this 4-ingredient recipe. People at your next potluck or party are going to thank YOU. Your kids might nominate you for mom of the year, even.
If you love peanut-butter, and are trying to stay away from refined sugar and excess grains (especially gluten or wheat), you are going to love this recipe. It is CRAZY simple. The bars taste fantastic with milk. They are rich and nutty; best served WARM.
A friend of mine who eats even healthier than we do shared this recipe with me. In fact, after I ate one of these that she made for our homeschool group about three or four years ago, I KNEW I had to have this recipe. I waited a long time to get it because I dropped out of our homeschool group while I was busy post-pardum with my last baby (who is now 3.5 years old). God ordained that both me and my friend would be ready to get back to co-op this year and by-golly, the first thing I asked her was, “You remember those peanut-butter brownies you made back at the healthy food mom’s fellowship night when you first joined the co-op?” You’re thinking… she’s so shallow, right? Food is my language, people. Don’t hate.
My daughter takes these a lot to her weekly teen bible study and never has any left for us when she gets back. I’ve learned to pilfer the pan before she leaves if I want to get one.
- 2 farm fresh organic eggs
- 2 cups organic peanut-butter
- 1/2 cup raw honey
- 1 tsp baking soda
- Preaheat oven to 350°
- Mix all ingredients well
- Spread and flatten into greased 9×13 inch baking pan
- Use paper towel to dab grease off of top
- Bake for 20 minutes
If you want to get really fancy, you could drizzle honey, melted stevia-infused dark chocolate chips, or home made whipping cream on top. Then you will need to invite me over to eat them with you. No, seriously. Pinky promise?
And here you thought that my life was horrible because we don’t eat refined sugar!

I wonder if you could add a couple tablespoons of baker’s cocoa to this to make them chocolate brownies? 😀 Either way, Yummm!
